The strawberry has big, juicy hunks of fruit in it. It has a joyously tangy edge to it to liven up the sweetness. Too many preserves and jams are loaded with pectin and not enough fruit to keep it interesting. Preserves should be more than a jam or jelly. It should have texture and weight to it. It should add something to the bread.
Bonne Maman is the grand, high lord of this.
